摘要 食源性疾病多由食源性致病菌引发,有效地对食源性致病菌进行检测是控制食源性疾病的关键环节。传统检测技术存在耗时长、效率低等问题,故快速、灵敏的新型检测技术成为国内外研究的热点。本文较为系统地介绍了利用免疫学、分子生物学等技术快速检测食源性致病菌的方法,总结了PCR检测技术、生物传感器检测技术、噬菌体识别检测技术等新型的致病菌检测技术的研究现状。 Foodborne illnesses most caused by foodborne pathogens,the key control foodborne illness effectively method was detect foodborne pathogens . Traditional methods for detection of foodborne pathogens exist cost much time, low efficiency , etc.So new detection technology with rapid and sensitive become a hot research in at home and abroad. In this paper systematically introduced some methods which were use immunology, molecular biology techniques for fast detection of foodborne pathogens , summed up some new pathogen detection technologies research status , such as the PCR detection technology, bio-sensor technology, phage recognition and detection technology and so on
