摘要
低分辨核磁共振技术通过对氢质子驰豫时间的分析,实现对样品中被检测项目定性或定量的检测,该技术以其无损、快速、精确等特点在食品安全分析检测中得到初步应用。通过对低分辨核磁共振技术在食品安全分析中水分检测、微生物快速检测、食品安全掺假识别的研究进行阐述,以推进其在食品安全领域中更广泛的研究与应用。
Samples were detected qualitatively or quantitatively with hdrogen proton relaxation time by Low-Field nuclear magnetic resonance technique. It has been applied primary in food safety analysis and detection with its non-destructive, quick and accurate characteristics. It is elaborated on moisture testing, microbial detection quickly,identification in food safety for promoting application and research of LF-NMR in food safety field widely.
