高纤维饲粮中添加果胶酶和纤维素酶对五龙鹅生长性能、屠宰性能及肉品质的影响 被引量:16

Effects of High Fiber Diets Supplemented with Pectinase and Cellulase on Growth Performance,Slaughter Performance and Meat Quality of Wulong Geese

摘要 本试验旨在研究高纤维饲粮中添加果胶酶和纤维素酶对五龙鹅生长性能、屠宰性能及肉品质的影响.选用1日龄五龙鹅216只,随机分为6组,每组3个重复,每个重复12只鹅.Ⅰ组为对照组,饲喂高纤维基础饲粮,Ⅱ、Ⅲ、Ⅳ组分别在基础饲粮中添加5 000、10 000、15 000 U/kg的果胶酶,Ⅴ组在基础饲粮中添加5 000 U/kg果胶酶和40 000 U/kg纤维素酶,Ⅵ组在饲粮中添加10 000 U/kg果胶酶和40 000 U/kg纤维素酶.试验分1~4周龄和5~16周龄2个阶段,试验期16周.结果表明:1)与对照组相比,Ⅲ组显著提高了1~4周龄鹅平均日采食量(P<0.05),极显著降低了5 ~16周龄鹅料重比(P<0.01);Ⅵ组极显著提高了1~4周龄和5~16周龄鹅平均日增重(P<0.01),极显著降低了1~4周龄和5~16周龄鹅平均日采食量和料重比(P<0.01).2)与对照组相比,Ⅲ组极显著提高了4周龄鹅的半净膛率、全净膛率(P<0.01),、Ⅵ组极显著提高了4周龄鹅的屠宰率、半净膛率、全净膛率和腿肌率(P<0.01),Ⅵ组极显著提高了16周龄鹅的屠宰率、半净膛率、胸肌率和腿肌率(P<0.01).3)与对照组相比,Ⅲ组显著降低了鹅肉的失水率(P<0.05),Ⅵ组显著提高了肉色亮度(P<0.05),Ⅴ、Ⅵ组极显著降低了鹅肉的失水率(P<0.01).由此可见,高纤维饲粮中添加10 000 U/kg果胶酶能够提高五龙鹅的生长性能和屠宰性能,10 000 U/kg果胶酶与40 000 U/kg纤维素酶配合使用效果更佳. This experiment was conducted to study the effects of high fiber diets supplemented with pectinase and cellulase on growth performance,slaughter performance and meat quality of Wulong geese.A total of 216 one-day-old Wulong geese were randomly divided into 6 groups with 3 replicates per group and 12 geese per replicate.The control group (group Ⅰ) was fed a high fiber basal diet,groups Ⅱ,Ⅲ and Ⅳ were fed the basal diets supplemented with 5 000,10 000 and 15 000 U/kg pectinase,respectivly,group Ⅴ was fed the basal diet supplemented with 5 000 U/kg pectinase and 40 000 U/kg cellulase,and group Ⅵ was fed the basal diet supplemented with 10 000 U/kg pectinase and 40 000 U/kg cellulase.The experiment concluded two periods:1 to 4 and 5 to 16 weeks of age.The experiment lasted for 16 weeks.The results showed as follows:1) compared with the control group,the average daily feed intake in group Ⅲ was significantly increased at the age of 1 to 4 weeks (P 〈0.05),and the feed to gain was significantly decreased at the age of 5 to 16 weeks (P 〈 0.01) ; the average daily gain in group Ⅵ was significantly increased at the age of 1 to 4 weeks and 5 to 16 weeks (P 〈 0.01),and the average daily feed intake and feed to gain were significantly decreased at the age of 1 to 4 weeks and 5 to 16 weeks (P 〈0.01).2) Compared with the control group,the percentage of half-eviscerated weight and percentage of eviscerated weight in group Ⅲ were significantly increased at the age of 4 weeks (P 〈0.01),the dressing percentage,percentage of half-eviscerated weight,percentage of eviscerated weight and percentage of leg muscle in groups Ⅴ and Ⅵ were significantly increased at the age of 4 weeks (P 〈 0.01),the dressing percentage,percentage of half-eviscerated weight,percentage of leg muscle and percentage of leg muscle in group Ⅵ were significantly increased at the age of 16 weeks (P 〈0.01).3) Compared with the control group,and the water loss rate of meat in group Ⅲ was significantly decreased (P 〈0.05),the meat color lightness value in group Ⅵ was significantly increased (P 〈 0.05),the water loss rate of meat in groups Ⅴ and Ⅵ was significantly decreased (P 〈 0.01).In conclusion,high fiber diets supplemented with 10 000 U/kg pectinase can improve the growth performance and slaughter performance,and the high fiber diets supplemented with 10 000 U/kg pectinase and 40 000 U/kg cellulase have the better performance.
