摘要
以香菇、黑木耳、牛肉为主要原料,开发一种具有保健功能的调味品。通过正交试验确定最佳工艺配方:香菇和黑木耳用量比为2∶1(总量为32.5%),牛肉用量为15%,黄酱量为15%,麻油用量为2%。此产品具有香菇、黑木耳特有的清香,营养丰富,是一种集营养美味于一身的调味品。
In this paper, take Lentinus edodes, Auricularia auricular and beef as main raw materials, develop a kind of condiment with health care function. The orthogonal design is adopted to research the optimal formula process. The result shows that the optimal formula is: Lentinus edodes to Auricularia auricular of 2 = 1(32. 5% of the total), beef of 15%, gold sauce of 15%, sesame oil of 2%. This product has unique fragrance of Lentinus edodes and Auricularia auricular, rich nutrition, and it is a kind of condiment with nutrition and delicacy.
