摘要
生物保鲜剂以其天然、无毒等优点,越来越受到人们的推崇,尤其在水产品保鲜中具有广阔前景。文章首先介绍生物保鲜剂的保鲜机理,然后详细阐述4种常用生物保鲜剂(茶多酚、壳聚糖、乳酸链球菌素和溶菌酶)近年来国内外的研究成果,最后讨论它们组成的复合保鲜剂在水产品中的应用。不同生物保鲜剂间的结合使用,可以实现更加有效的保鲜效果,延缓水产品品质下降速度,从而延长其货架期。
Because of its natural, non-toxic, and other advantages, biopreservative is more and more respected by the people, especially in aquatic preservation with broad prospects. In this paper, preserva tion mechanism was introduced, and then discussed four major biopreservatives such as tea polyphenols, chitosan, nisin and lysozyme in details. In addition, finally the application of composite preservative on aquatic products was also discussed. Different biological preservative used in conjunction can achieve a more effective preservation effects, reduce the speed of quality change, and extend the shelf life of aquatic products.
