茶鲜叶摊放与萎凋技术及设备应用现状与改进 被引量:11

摘要 鲜叶摊放与萎凋是茶叶初制的一个关键工序,合理的鲜叶处理能很好地改善和提高茶叶品质。摊放与萎凋技术本质相似,对于环境条件的要求和处理方法也存在一定共性。深入研究摊放和萎凋技术的区别与联系、处理条件对茶叶内在品质的影响以及鲜叶处理设备的改进对于茶叶生产具有重要意义。本文综述了茶鲜叶摊放、萎凋的技术原理和二者之间的差异性、两项工艺处理与品质之间关系的研究进展以及所用设备的使用现状,并针对目前茶鲜叶处理过程中存在的问题,提出了多功能前处理机的应用及今后茶叶生产的发展方向。 The spreading and withering of the fresh leaves is the key technology in the early tea processing, which can effectively improve the tea quality. These two technologies have common in the nature, requirements of environmental conditions and processing method. It will have an important significance in tea processing that depth study in the differences and connection between the spreading and withering technology, the impact of different treatment methods on the quality of tea and improvement of fresh processing device. Therefore, reviews the principles, differences and the research status of its processes and equipment between spreading and withering. Considering the problems of the tea processing, we put forward the application of muhifunctional pre-treatment processor and the development direction of tea production in the future.
