摘要
对分离自云南德钦产区的10株野生酵母菌株进行了耐受性分析。结果表明,供试酵母菌株的耐受性有显著差异,菌株YE-3和YE-4的综合耐受力较强,均能分别在含糖量高于700 g/L、酒精度12.0%、含SO2700 mg/L、氯化钠浓度100 g/L、高温50℃、低温5℃、pH低于1.5或高于12.5的液体培养基中发酵。
The tolerance capacities of ten wild yeast strains, isolated from Deqin region of Yunnan, were analyzed. The results showed that the tolerance capacity of all strains had obvious difference, strain YE-3 and YE-4 presented better tolerance capacity than other eight, and they could grow well in the fermentation medium with sugar content higher than 700 g/L, alcohol degree 12%, sulfur dioxide level 700 mg/L, sodium chloride concentration 100 g/L, high temperature at 50 ℃, low temperature at 5 ℃, pH lower than 1.5 or higher than 12.5 respectively.
