摘要 探索如何解决餐饮食品质量安全问题已经成为国内外学者研究的重点问题。运用博弈方法分别构建了餐饮企业与消费者之间、政府监管机构之间的博弈模型,探讨如何应对我国餐饮企业食品质量安全监管的问题。结果表明,要想解决餐饮企业食品质量安全监管问题,不仅政府监管机构要加大监管力度和惩罚力度,而且要尽可能地降低监管成本,同时也要鼓励消费者参与餐饮企业的食品质量安全监督。 To explore how to solve quality and safety issues of catering food has become the focus of the study of domestic and foreign scholars. This paper applies the game method to present the game model between the dining between businesses and consumers, government regulatory agencies to analyze how to deal with the problem of food quality and safety supervision of catering enterprises in China. The results show that, in order to resolve the regulatory issues of food quality and safety of catering enterprises, not only government regulators need intensify supervision and punishment, but also need reduce the cost of regulation as far as possible. At the same time, government also need encourage consumers to participate in food quality and safety supervision of catering enterprises.
