摘要
广西南部属于南亚热带季风气候区,冬季光热资源丰富,降水稀少。利用反季节栽培技术,采用避雨栽培,人工诱发萌芽等措施,使雷司令葡萄在该地区成功种植。以反季节栽培的雷司令冬果为原料进行酿酒试验,并对果实及葡萄酒品质进行分析,利用GC-MS检测香气物质。结果表明,反季节栽培的雷司令在桂南地区生长表现良好,葡萄酒中含有28种酯类,6种醇类,7种羧酸类,3种其他香气物质,表现出品种的特征香气。
The south of Guangxi belongs to the subtropical monsoon climate, where there is abun- dant sunshine and heat resources, rare rain in winter. Riesling grape can be planted successfully by off-season cultivation technique, rain-shelter-cultivation and artificial inducing sprout in southern Guangxi. The second-crop of Riesling grape was used as raw materials for wine-making experi- ments. The qualities of grapes and wine were analyzed, and the major flavoring compositions of the wine were detected by GC-MS. The results showed that the Riesling grape grew well in the south of Guangxi with off-season cultivation technique. The wine contains 28 esters, 6 alcohols, 7 acids and 3 other flavoring compounds, which represented the aroma characteristic of this eultivar.
