摘要
针对叶菜类蔬菜硝酸盐累积严重影响产品安全质量问题,基于氮-硫代谢相关性理论,采用亚硫酸氢钠(NaHSO3)和硫酸钠(Na2SO4)进行叶面喷施处理,研究其对小白菜(Brassica campestris L.ssp.chinensis var.communis Tsen et Lee)叶片硝酸盐含量、氮代谢关键酶活性和营养品质等的影响。与对照相比,以10mmol/L S为总量,NaHSO3和Na2SO4以1∶1比例混合喷施在处理后第12天效果优于单独喷施,使得小白菜叶片的硝酸盐含量显著降低了61.69%。同时,混合喷施对提高小白菜叶片氮代谢关键酶活性的作用显著,硝酸还原酶(NR)、谷氨酰胺合成酶(GS)、谷氨酸草酰乙酸转氨酶(GOT)和谷氨酸丙酮酸转氨酶(GPT)活性分别提高61.69%,24.09%,51.30%和79.55%。此外,混合喷施的Vc含量显著高于单独喷施,并使得叶绿素b含量提高13.42%。综上所述,NaHSO3和Na2SO4配施显著降低了小白菜叶片硝酸盐含量并且提高了氮代谢关键酶活性,从而拉动了氮代谢的高效运转。
This study was aimed at resolving the problem of nitrate accumulation in the leaf veg-etables that influences the quality of agricultural products badly, based on the nitrogen and sul-fur metabolism correlation, and taking the non-heading Chinese cabbage as materials. Different ratios of NaHSO3 and NazSO4 were sprayed on the leaves, aiming to study its effects on the nu-tritional quality and nitrate content in the leaves of non-heading Chinese cabbage. The results showed that whatever the ratios of NaHSO3 and Na2SO4 were, the spraying could reduce the nitrate content in the leaves of non-heading Chinese cabbage dramatically. Compared with Con- trol group, in a total of 10 mmol/L S, on the 12th day after spraying the mixture, the mixture with the ratio of 1 : 1 got the best effect, reduced the nitrate content by 61.69%. At the same time, the activities of key enzymes of nitrogen metabolism were increased by 61. 69%, 24.09%, 51. 30% and 79. 55% respectively. sprayed with the mixture was better than those What's more, the Vc sprayed with only one content in the leaves of them. And it made chlorophyll b content increased by 13.42%. Therefore, the NaHSO3 and Na2SO4 combination application can significantly reduce the nitrate content in leaves of non-heading Chinese cabbage and increase the activity of key enzymes of nitrogen metabolism, and it plays a more effective role in promoting the efficient functioning of nitrogen metabolism.
