摘要
对牦牛配方肉粉中的氨基酸、维生素、主要矿质元素以及常规营养成分进行了分析,采用公认的标准方法进行测定,并与黄牛肉进行了对比。结果表明,牦牛肉粉营养丰富,与黄牛肉粉相比,粗蛋白、氨基酸总量、矿物质元素锌、铜与钙、V E、V B1、V B2的含量均高于黄牛肉粉,其EAA/NEAA的比值超过WHO/FAO推荐的理想模式(EAA/NEAA=0.6)。
To analyze the aminophenol, mineral, vitamin and the basic nutrient components of the yak meat formula powder, which was operated by an international standard method, and compare with the beef. The results were indicated that: Yak meat is rich in nutrition. To compare with beef formula powder, the content of crude protein, total amino acid, zinc, copper, calcium, V E, V B1, V B2 of yak meat formula powder is higher. The ratio of EAA and NEAA is higher than the ideal mode(EAA/NEAA=0.6) which recommended by WHO/FAO.
