摘要
以常压MAP贮藏梨枣为对照,研究梨枣在81.1、50.7和20.3 kPa真空压力下膜脂过氧化和保护酶活性的变化。结果表明低压抑制梨枣的呼吸强度和LOX活性及MDA的积累,减缓相对电导率的增加,延缓膜脂过氧化进程,且压力越低,作用越明显。以20.3 kPa的真空条件贮藏梨枣最好。低压在一定程度上抑制了果实的POD活性,提高了果实的CAT活性。在20.3 kPa真空贮藏的梨枣CAT活性最高,与对照呈极显著差异。
The membrane lipid peroxidation and activity of protective enzymes of Lizao under different vacuum pres- sure(81.1 kPa, 50.7 kPa, :20.3 kPa) were studied contrasted with that under modified atmosphere packaging storage. The results showed that hypobaric conditions could inhibit the respiratory intensity, the activity of Lox and accumulation of MDA, delay the increasing of relative conductivity, retard effectively the progress of membrane lipid peroxidation. The lower the pressure is, the better is the function. 20.3 kPa is the best pressure for hypobaric storage. The activity of POD was restrained at a certain degree and the activity of CAT was enhanced. The activity of CAT of Lizao under hypobaric condition of 20.3 kPa was the highest and has extremely marked difference comparing with the contrast.
