摘要
[目的]筛选南烛叶中乌饭成分提取工艺的最优参数,研究乌饭色素应用环境稳定性。[方法]采用单因素试验,以色素溶液吸光度为考察指标,以料液比、温度、时间为影响因素,研究南烛叶中乌饭成分的最佳提取工艺,并考察乌饭叶中乌饭成分在酸性条件、碱性条件、室温和热贮存条件下的稳定性。[结果]当料液比为1∶10(g/ml)、提取温度85℃、时间90 min为最佳提取工艺。南烛叶乌饭成分在蒸馏水和酸性条件下表现出良好的短时稳定性,而在高温和碱性条件下稳定性很差。[结论]南烛叶中乌饭成分宜在中性和室温条件下保存。
[ Objective ] To optimize the extracting process of black rice pigment from Vaccinium bracteatum and investigate the stability in ap- plication environmental of the pigment. [ Method ] Factors (solid-liquid ration, temperature and extraction time) and stability in acidic, alka- line, room temperature or high temperature storage environment were investigated by single factor experiment design and absorbance test. [ Re- suit] The optimal extraction conditions were the ratio of material to solvent 1: 10, the extraction temperature 85 ~C and the extraction time 90 min. The better stability of black rice pigment of Vaccinium bracteatum were showed when stored in neutral or acidic solution but poor stability stored in alkaline or high temperature environmental solution. [ Conclusion] The black rice pigment of Vaccinium bracteatum should be stored in neutral solution under room temperature.
