摘要 以啤酒酵母粉为原料,采用碱法提取酵母多糖,通过膜分离技术和大孔吸附对多糖进行分离纯化得到碱提多糖和酵母葡聚糖。对啤酒酵母粉和多糖的总糖、蛋白和脂肪含量进行了分析,多糖经水解后利用HPLC分析单糖组成,结果表明碱提多糖由甘露糖组成,不溶葡聚糖由葡萄糖组成。 Using beer yeast powder as material,yeast polysaccharide was extracted from them by watery alkali method. Isolation of alkali-extracted polysaccharides and yeast glucan by membrane separation technology and macroporous adsorption resin. The amount of total sugar,protein and lipid was determine in yeast glucan and alkali soluble polysaccharide,the product with high total sugar and with few impurity. The polysaccharide was hydrolyzed bytrifluoroacetate,the hydrolyzate was assayed by HPLC ,the results showed that alkali-extracted polysaccharides composed of mannose, yeast glucan composed of glucan.
