伪劣油脂中过氧化值的定性定量检测 被引量:3

摘要 采用改良后的比色法,对从合肥市不同餐馆采集到的若干油样与市售食用植物油的过氧化值进行定性定量检测,根据显色的深浅同标准比色卡对照(以过氧化值10为界),鉴别出伪劣油脂和正常食用油。由检测结果可知,伪劣油脂145个、占总油脂样品的53.1%,其中小饭店伪劣油样为46个、占31.7%,路边摊伪劣油样为44个、占30.3%,大排档伪劣油样为35个、占24.1%,大饭店伪劣油样为20个、占13.8%。研究由比色法来鉴别伪劣油脂,可以作为伪劣油脂与合格食用油的快速鉴别方法。 Using colorimetric method, peroxide value of edible vegetable oil collected from different restaurants in Hefei are detected qualitatively and quantitatively. According to the depth of the color with standard color card reference (by a peroxide value 10), inferior oil and normal oil are identified. The test results shows that the 145 inferior oil accounted for 53.1% in all samples, including 46 samples from small restaurant, accounted for 31.7%; 44 samples from street oils, accounting for 30.3%; 35 samples from Hawker food oil, accounting for 24.1%; 20 samples from big restaurant, accounted for 13.8%. This experiment shows that colorimetric method can be the rapid detection to identify inferior oil and edible vegetable oil.
