摘要
酪蛋白磷酸肽(CPP)是以牛乳酪蛋白为原料,通过生物技术制得的具有生物活性的多肽,能有效促进人体对钙、铁、锌等二价矿物营养素的吸收和利用,可用于各种营养、保健食品。本研究对不同种类的酶水解牛乳酪蛋白,优选出CPP得率最高的LC-1酶,对其工艺条件进行优化,确定其最佳酶解条件为:pH8.0、温度50℃、底物浓度10%、酶解时间2h。通过中试验证,CPP含量为22.3%。
Casein phosphopeptides (CPP), containing Biological activity, were derived from casein by biotechnology. The epps, Widely used in a variety of nutrition and health food , can effectively promote the absorption and utilization of calcium, iron, zinc and other divalent mineral nutrient, different kinds of enzyme of casein hydrolysis was studied, preferred the highest epps yield of LC - 1 enzyme, Optimum production process, the optimal conditions for enzymolysis was obtained as follows: pH 8, temperature 50degree celsius, substrate concentration 10%, enzymolysis time2h. Through the test validation, the content of CPP was 22. 3%.
