摘要
以蓝莓为原料,在单因素试验基础上,以乙醇体积分数、液料比、提取时间、pH和提取温度为响应因素,花青素提取量为响应值,采用5因素3水平的响应面分析法,确定最佳提取工艺条件为:提取温度50℃、料液比1∶20(g/mL)、乙醇体积分数70%、pH 2、提取时间1 h,提取量为0.444 g/L。经测定,蓝莓花青素具有较强的DPPH自由基和ABTS自由基清除能力及还原能力,可作为优良的天然抗氧化剂来源。
On the basis of single-factor experiments, the optimal extraction conditions for maximizing blueberry anthocyanin were determined by using a 5-variable, 3-level Box-Behnken experimental design combined with response surface analysis as follows: the material-liquid ratio was 1 : 20 (g/mL); the extraction temperature was 50 ℃; the extraction time was 1 h; the ethanol concenWation was 70%, resulting in an blueberry anthocyanin yield of 0.444 g/L. At the same time, Blueberry anthocyanin was found to have powerful DPPH free radical, ABTS free radical scavenging capacity and reducing power. It could be developed as excellent natural antioxidant resources.
