摘要
超市作为冷链肉类物流的末端,对于保障冷链肉类的安全起着至关重要的作用。针对部分超市的调研现状,对超市保障零售环节冷链肉类安全进行了分析研究,通过该环节的危害分析,确立了超市应建立并有效实施的HACCP(hazard analysis critical control point,危害分析和关键控制点)体系,同时提出进一步完善此体系的建议,来进一步保障零售环节冷链肉类安全,真正形成"无缝化"连接的肉类冷链物流体系。
As the terminal part of the cold chain logistics for meat, supermarkets play an important role in the security of cold chain. Attempt to come up with appropriate strategies according to the present situation. It was found that supermarkets should establish and implement an effective hazard analysis critical control pointsystem (HACCP) by hazard analysis to ensure the safety of meat cold chain in retail, and meanwhile some advice was given to improve the HACCP system to form a real seamless-connected meat cold chain logistics system.
