摘要
报道了用气相色谱 -质谱 ( GC- MS)联用技术对十六种不同品牌的法国白兰地酒的成分进行剖析。提出了有无辛酸乙酯。
GC/MS was used to analyze sixteen brands of genuine French brandy. The analytical results showed that all of genuine French brandy contain higher ester compounds such as ethyl octanoate, ethyl decanoate and ethyl laurate which contribute to the characteristic flavor of French brandy. No or less higher ester compounds was detected in the adulterated French brandy. The genuine French brandy can be identified by the determination of such compounds with GC/MS.
