烟梗人工醇化过程中主要化学成分的变化 被引量:11

摘要 为研究烟梗在人工醇化过程中的变化规律,选取3个产地上、中、下部位的9种样品为代表进行为期一年的人工醇化,定期检测其pH、总糖、还原糖、总氮、总植物碱和5-羟甲基糠醛含量,探索其在醇化中的变化规律。结果表明:①人工醇化过程中烟梗pH呈现出逐渐降低的趋势,醇化后期的变化幅度减弱;②还原糖和总糖含量呈现不断降低的趋势;③总氮和总植物碱的含量基本保持不变;④5-羟甲基糠醛的含量先降低又逐渐升高。烟梗醇化对促进Maillard反应具有积极贡献。 In order to research the variation of tobacco stem during artificial aging, nine tobacco stem samples from three stalk positions and three areas were artificially aged for one year. The contents of total sugar, reducing sugar, total nitrogen, total alkaloid, and 5-hydroxymethylfuraldehyde (5-HMF) in and pH of the stem samples were determined regularly. The results showed that: l) The pH of stem gradually declined during aging, though it changed more slowly at later stage. 2) The contents of reducing sugar and total sugar showed a continuously decreasing trend. 3) The contents of total nitrogen and total alkaloid were basically unchanged. 4) The content of 5-HMF reduced at first and then increased gradually. The process of artificial aging effectively promoted the Maillard reaction in tobacco stem.
