摘要
[目的]选育酿造低甲醇高总酯蒸馏酒的酿酒酵母菌株。[方法]利用原生质体融合技术,对低甲醇酿酒酵母与高总酯酿酒酵母进行融合。[结果]选育出的酵母菌种酿造蒸馏酒中的相对甲醇含量为145.31 mg/L,比初始低甲醇菌株降低了22.8%,总酯含量为0.79g/L,增加了83.7%。[结论]原生质体融合法成功选育出低甲醇高总酯的酿酒酵母菌株。
[Objective] Screening Saccharomyces cerevisiae of brewing distilled liquor with low methanol and high total esters.[Method] Technology of protoplast fusion was used to fusing Saccharomyces cerevisiae of low methanol and Saccharomyces cerevisiae of high total esters.[Result]The methanol was 145.31 mg/L in the distilled liquor fermented by protoplast fusion,decreasing 22.8% than strain of low methanol.The total ester was 0.79 g/L,increasing 83.7%.[Conclusion] The Saccharomyces cerevisiae of low methanol and high total esters was obtained by technology of protoplast fusion.
