摘要
涂膜法是近年来国内外发展起来的较先进的鸡蛋保鲜方法之一,并且逐渐朝着天然、无毒、可食的方向发展,适合我国蛋业生产现状,应用前景十分广阔。综述了不同新型可食性材料在鸡蛋涂膜保鲜技术中的应用,并探讨了影响保鲜效果的因素。
In recent years,coating is one of the most advanced egg preservation methods both at home and abroad.Now,it is developing towards the natural,nontoxic and edible direction.Thus,the application of new coatings has a very broad prospect in China.This paper made an overview of application of different edible coatings in egg preservation technologies and discussed factors influencing the preservation effect.
