摘要
与传统手工酿造工艺相比,酿酒机械化具有降低手工劳动强度、改善操作环境、提高产能等优点,但同时机械化酿造工艺还需注意提高员工素质、调整工艺细节,以及确保人员、设备安全等问题。结合浓香型白酒企业的生产实践,在对比传统手工酿造与机械化酿造工艺的基础上,探讨了酿造连续性机械化车间的布置,指出酿酒机械化进程中的自动化、数据化,特别是机械化上甑、晾米查、出池入窖等方面的研究,将是今后白酒酿造机械化领域研究的方向与趋势。
Compared with traditional liquor- brewing process,liquor- brewing mechanization could reduce manual labor intensity,improve the operating environment,improve productivity and some other advantages,but at the same time mechanized brewing process also need to pay attention to improve the quality of staff,adjust details of technics,ensure the safety of persons and equipments.In this paper,combining with the production practice of enterprise,the brewing mechanical workshop layout was discussed based on the comparison of traditional brewing and mechanization brewing.Pointed out that in the process of liquor- brewing mechanization the automation and data,especially the research on pool,pit entry,mechanization,will be the the direction and trend in the field ofliquor production mechanization.
