摘要
目的：了解酒泉市近年来亚硝酸盐食物中毒的原因，探讨亚硝酸盐食物中毒的预防措施。方法采用流行病学调查方法对2012～2013年间7例亚硝酸盐食物中毒的原因进行总结分析。结果4例为亚硝酸盐没有标签引起的误食，3例为食用含过量亚硝酸盐的卤制品引起的中毒。结论亚硝酸盐的误用和滥用是导致食物中毒的重要原因，应加强亚硝酸盐的市场管理以及居民科学普及工作，杜绝亚硝酸盐食物中毒的发生。
Objective To investigate the causes of nitrite food poisoning in Jiuquan city in recent years to dis-cuss the prevention measures .Methods A total of 7 cases of nitrite food poisoning occurred during 2012 to 2013 were investigated with epidemiological method .Results Lack of labels accounted for 4 cases ,and excessive a-mount of nitrite in halogen products for the other 3 cases .Conclusions The mistaken and overuse of nitrite were the essential causes for food poisoning .Market management and health education on nitrite should be enhanced in order to completely eradicate food poisoning caused by nitrite .
