摘要
选用 10 0日龄、1岁以及 5岁年龄段的杂种肉用羊为实验用羊 ,采用冷式提取脂肪技术以及气相色谱 (GC)技术测定了肉用羊不同阶段体脂脂肪酸的变化。研究结果表明 ,放牧前与放牧后羊体脂脂肪酸表现出显著的变化。在肌肉中 ,放牧前羔羊、放牧 1岁羊及 5岁成年羊之间在单链不饱和脂肪酸含量上有显著的差异 (P <0 .0 5)分别为 4 5.2 2 %、2 7.4 6 %和 2 4 .83%。羔羊和 1岁羊及成年羊在多聚不饱和脂肪酸的含量上也有着显著的差异 ,分别为 8.4 5%、5.78%和 5.1% (P <0 .0 5) ,奇数碳脂肪酸在 5岁成年羊肉中为最高 ,达到 6 .0 9% ,其次是 1岁羊 ,为 5.74 % ,羔羊最低 ,仅为 2 .89% ,三个年龄组之间的差异显著 (P <0 .0 5)。肌肉中短链脂肪酸的含量以羔羊为最低 ,其含量为 0 .14% ,其次是 1岁羊 ,为 0 .34% ,5岁成年羊的含量最高 ,达到 0 .4 1%。羔羊和 5岁成年羊之间的差异显著 ,但是 ,1岁羊与羔羊及 5岁成年羊相比 ,其差异不显著 (P >0 .0 5)。皮下脂肪酸在年龄组之间也表现出变化 ,三个年龄组之间比较 ,单链不饱和脂肪酸的含量以羔羊为最高 4 6 .35% ,其次为 1岁羊 31.56 % ,最低是 5岁成年羊 2 8.4 5% ,三个年龄组之间差异显著 (P <0 .0 5)。多聚不饱和脂肪酸的含量 ,1岁羊最高为 5.6 9% ,羔羊次之 5.4 7% ,
Meat type crossbred sheep at the age of 100 days, 1 year and 5 years old were used as the experiment animals. The fatty acid profiles of subcutaneous and intermuscular fat of the animals were investigated by cold extraction method and GC technique. There were significant variations of fatty acid profile being observed at the different growing period of the meat sheep. Odd chan fatty acids in lamb, junior and adult were showed markedly variation among three age group, which were 45.22%, 27.46% and 24,83% respectively. Polyunsaturated fatty acids were 8.45%, 5.78% and 5.10% respectively, however there was no markedly difference between junior and adult . The level of short chain fatty acid in three age groups were 0.14%, 0.34% and 0.41% respectively, there was markedly difference showing between lamb and adult (P<0.05), but no markedly differences were found between the rest of combinations. For subcutaneous fat, there were also markedly difference showed among the three age groups in their content level of monounsaturated fatty acids (P<0.05), which were 46.35%, 31.56% and 28.4% for lamb, junior and adult respectively. The content of polyunsaturated fatty acids were the highest found in 1 year old sheep ( 5.69% ) and followed by lamb ( 5.47% ), the lowest level was showed in adult (4.86%), there were markedly differences showed between adult and junior as well lamb(P<0.05) , but no difference was found between lamb and junior. Odd chain fatty acids were also showed difference between lamb and adult, and no significant difference was showed between junior and adult. The conclusion can be drawn out that using the sheep at the age around 1 year old should produce the best quality sheep meat with the highest nutritional value. In addition, the sheep slaughtered at this age will also realize the most economic returns compared to the sheep slaughtered at younger age or older age.
