难消化淀粉是指难以被小肠吸收消化的淀粉 ,它能逃避小肠的吸收进入大肠 ,被结肠微生物发酵产生许多独特的生理作用。概述了难消化淀粉的生理功能。
Enzyme-resistant starch (RS) refers to the starch which can escape digestion in small intestine and has many particularly physiological functions after it fermented with micro biota in colon. The physiological function, determining and preparation method of enzyme-resistant starch as well as its application in foods were expounded.
