摘要
研究了木瓜蛋白酶对猪血粉蛋白的水解作用。结果表明 :木瓜蛋白酶对猪血粉水解的最适 p H值为7.0 ,最适温度为 70℃ ,且 90℃时仍具相当的水解能力。在水解时间为 12 h,血粉∶酶干粉 =10 0∶ 2时 ,其表观消化率为 75.77%。
A study has been conducted for hog blood powder digested by papain.The results indicated that the enzyme required an optimum pH value of 7.0 for the hydrolysis of the hog blood powder.The optimum temperature was 70℃. And it still has considerable activities at 90℃.The test showed that the digestion ratio of the enzyme is 75.77% when the hydrolytic time was in 12 hours and the ratio of the dry enzyme powder to blood powder is 100∶2.
