摘要 研究以 β 环糊精为主要壁材 ,采用喷雾干燥法制取ω 3多不饱和脂肪酸微胶囊。通过正交试验确定最佳工艺参数为 :明胶与环糊精的配比为m(明胶 )∶m(糊精 ) =1∶7,喷雾干燥进出口温度为 140 /80℃ ,原料的乳化过程为 2次细磨 1次均质。 Microencapsulation of ω 3 polyunsaturated fatty acid made by spray drying process, using β cyclodextrin as mostly wall materials were studied in this thesis. By orthogonal design with organoleptic evaluation, optimum technology conditions were established: formulation of gelatin:β cyclodextrin is 1∶7, inlet/outlet temperature of spray dryer is 140/80℃, process of emulsification is two times fine grinding and one times homogenization. The effects of embedding were validated by accelerated preservative test.
