摘要
用乙醇从中药大黄中提取色素 ,对大黄色素抑菌作用进行研究。结果表明 ,一定浓度的大黄色素对大肠杆菌、金黄色葡萄球菌、黑曲霉、啤酒酵母都有抑制作用 ,其抑菌作用强弱的顺序为 :金黄色葡萄球菌 >黑曲霉 >啤酒酵母 >大肠杆菌 ,尤其对金黄色葡萄球菌抑菌作用更为显著。实验结果同时表明 ,大黄色素在中性、酸性抑菌作用最强 ,并能耐受高温短时、超高温瞬时热处理 ,从而推断它可作为抑菌剂应用于食品中。
This paper studied the bacteriostasis of pigment which was extracted from Radix et Rhizoma with ethanol.The results indicated that pigment with a certain concentration could inhibit the growth of Escherichia coli,Staphylococus aureus,Saccharom\|yces cerevisiae and Aspergillus niger. The order of bacteriostasis toward microbes from strong to weak was Staphylococus aureus>Aspergillus niger>Saccharomyces cerevisiae>Escherichia coli., especially antimicrobile to Staphylococus aureus. The dependence of activity on heating conditions was shown as well.It's concluded that the pigment could be used in food as an antispetic.
