摘要
采用紫外线 (uv)照射并以 2 %壳聚糖对鸡蛋进行涂膜复合处理 ,然后将其在 3 4±1℃高温条件下放置一个月 ,结果表明 :与对照组 (ck)相比 ,鸡蛋失重率降低 5 .3 % ,散黄出现时间推迟 ,散黄率降低 5 8.3 % .此外 ,蛋清中溶菌酶活性、蛋清透明度、表面色泽。
Liaoning health eggs were radiated with ultraviolet light (UV) and coated with 2% chitosan membrane, then kept at high temperature (34±1℃) to exam the fresh keeping effects of the above treatments. It was showed that, compared to the CK, the weight loss rate of the treated eggs was reduced by 5.3%, the breaking up of yolk was postponed, and the rate of breaking up was reduced by 58.3%. In addition, the activity of lysozyme, the transparency of albumen, the colour and lustre of the egg surface and other detective charaetenstics were much better than those of the CK.
