大连沿海13种食用海藻的营养组成分析 被引量:44

摘要 对采自大连沿海分属于绿藻门、红藻门及褐藻门的 13种食用海藻的有机和无机组成进行了研究 .它们的粗蛋白、粗脂肪、粗纤维及总糖含量分别为 12 2~ 2 0 5 ,1.0~ 2 1.8,18~ 12 2 ,35 9~ 6 71g/kg .它们的不饱和脂肪酸含量丰富 ,约占脂肪酸含量的 5 5 %~ 6 7% ;孔石莼与海萝具有较高的氨基酸含量 ;测定了 13种海藻的矿物质、微量元素和维生素 .结果表明 :这些海藻含有丰富的氨基酸及不饱和脂肪酸 ,富含有人体必需的矿物质、微量元素及维生素 .为海藻食品的开发 。 This present paper examines nutrient components of thirteen kinds of quickly growing seaweeds for food collected from the coastline of Dalian,which belong to Phaeophyta,Rhodophyta and Chlorophyta.The contents of proteins,lipids,fibers and total sugar in them are 122~205,1.0~21.8,18~122,359~671 g/kg respectively.They are all rich in unsaturated fatty acids,which occupy 55%~67% of the total fatty acids; U.pertusa and G.furcata contain higher amino acids.The paper determines minerals,trace elements and Vitamins,too.The results show that they contain a plenty of amino acids and unsaturated fatty acids;rich in minerals,trace elements and Vitamins which all are required by body.These provides the basis of nutrient evaluation for development of seaweed food.
