摘要
目的了解甘肃省白银市农村义务教育学校学生和食堂从业人员的食品安全知信行情况,为今后有针对性地选择适宜的方式开展食品安全宣传教育提供依据。方法2017年5—6月采用整群分层随机抽样法,抽取白银市农村义务教育学校学生和学校食堂从业人员,以自行设计的食品安全知识问卷进行调查,使用SPSS19.0分析数据。结果2017年调查白银市10所农村公办义务教育初级中学学生474人、食堂从业人员37人;学生日常生活中经常关注食品安全常识仅占33.76%,购买食品一定会看包装上生产日期占36.50%,知道生吃蔬菜和水果需洗干净的学生占70.04%;不同年级(χ^2=9.411)、不同性别(χ^2=3.956)和不同地区(χ^2=8.025)的学生对日常生活中经常关注食品安全常识的比例差异有统计学意义(均P<0.05);37名食堂从业人员均持有健康证,食品安全知识知晓率为60.00%,食品从业行为形成率为87.78%。结论白银市农村义务教育学校学生和食堂从业人员食品安全知识知晓率偏低,应加强师生的食品安全知识宣传教育、提高食品安全知识知晓率。
Objective To understand the situation of food safety knowledge, attitude and practice of students and canteen workers in rural compulsory education schools in Baiyin city of Gansu province, and provide basis for targeted food safety education and suitable educational mode in the future. Methods The students and canteen workers in compulsory schools in rural area of Baiyin city were selected with cluster random sampling method for self designed questionnaire on the knowledge of food safety in 2017. Data was statistically analyzed by SPSS 19.0. Results Totally 474 students and 37 canteen workers in 10 compulsory schools were investigated in Baiyin city in 2017. The proportion of students often concerned food safety knowledge in their daily life, checked production date when purchasing and knew washing uncooked vegetables and fruits before eating was 33.76%, 36.50% and 70.04%, respectively. There were statistical differences (all P<0.05) in the proportion of often concerning food safety knowledge in their daily life among students in grades (χ^2=9.411), gender (χ^2=3.956) and different areas (χ^2=8.025). The awareness rate of food safety knowledge was 60.00% and the rate of hygienic behavior was 87.78% in 37 canteen workers. Conclusions The awareness rate of food safety knowledge of students and canteen workers is low in rural compulsory schools in Baiyin city. The propaganda and education on food safety knowledge should be strengthened in teachers and students to improve the awareness rate of food safety knowledge.
