摘要
近些年来,食品安全事件频发,已经影响了国计民生的稳定,食品安全需要灵敏高效的检测技术来严格把控。免疫传感器由于具有灵敏度高、特异性强、成本低、检测时间短、操作简便和便于推广等优点而成为研究热点,且其在医学、环境及食品安全检测等各个领域均有极为广泛的应用。本文简要综述了免疫传感器的原理和主要类型,重点探讨了该检测技术在食品中农药、兽药、生物毒素及病原微生物4类有害物检测的应用的研究现状,并对其未来的发展趋势进行了展望,以期为免疫传感器技术的进一步发展提供参考。
In recent years, food safety incidents have occurred frequently, which has affected the stability of the national economy and the people’s livelihood. Food safety requires sensitive and efficient detection technology to strictly control. Immunosensors have become research hotspots due to their high sensitivity, high specificity, low cost, short detection time, easy operation and easy promotion. They have a wide range of applications in various fields such as medicine, environment and food safety testing. This paper briefly reviewed the principle and main types of immunosensors, and focused on the research status of the detection technology in the detection of 4 kinds of harmful substances such as pesticides, veterinary drugs, biotoxins and pathogenic microorganisms in food, and prospected for its future development trend, in order to provide reference for the further development of immunosensor technology.
