摘要
对美藤果及美藤果油的理化性质和油脂的脂肪酸组成进行了分析。结果表明:美藤果粗蛋白质、粗纤维素、总糖及淀粉含量分别为28.87%、24.92%、6.33%和4.15%;美藤果油相对密度(d2020)为0.928 6,折光指数(n20d)为1.482 2,酸值(KOH)为0.46 mg/g,皂化值(KOH)为191.4 mg/g,碘值(I)为191 g/100 g,过氧化值为2.45 mmol/kg;美藤果油中共检出7种脂肪酸,主要为棕榈酸(3.83%)、硬脂酸(3.09%)、油酸(8.39%)、亚油酸(38.11%)、亚麻酸(45.62%),其中不饱和脂肪酸含量高达92.46%。
The physicochemical properties of Sacha Inchi and Sacha Inchi oil and fatty acid composition of Sacha Inchi oil were analyzed. The results showed that the contents of crude protein, crude fiber, total sugar and starch of Sacha Inchi were 28. 87%, 24. 92%, 6. 33% and 4. 15%, respectively. The rela-tive density( d2020 ) , refractive index ( n20d ) , acid value, saponification value, iodine value and peroxide value of Sacha Inchi oil were 0. 928 6,1. 482 2, 0. 46 mgKOH/g, 191. 4 mgKOH/g, 191 gI/100 g and 2. 45 mmol/kg, respectively. Seven kinds of fatty acids were detected in Sacha Inchi oil, the major fatty acids were palmitic acid ( 3 . 83%) , stearic acid ( 3 . 09%) , oleic acid ( 8 . 39%) , linoleic acid (38. 11%)and linolenic acid (45. 62%), and the content of unsaturated fatty acids reached 92. 46%.
