异麦芽糖醇溶解特性的研究

摘要 对异麦芽糖醇在水中的溶解特性进行了研究。研究结果表明,饱和液的Bx随Isomalt/Water(g/g)值的增加而增加,饱和液中的GPS/GPM值也同样随Isomalt/Water(g/g)值的增加而增加,例如,在温度为45℃条件下,当somalt/Water由0.91增加至2.00,饱和溶液的Bx由45.8增加至56.6,相应的饱和溶液中的GPS/GPM由1.09增加至3.30。GPS和GPM混合物的水溶特性与其GPS/GPM值直接相关,GPS/GPM越大,水溶性能越好。根据研究结果,可以生产出一系列不同GPS/GPM的“异麦芽糖醇”,以适应不同的应用领域。 In this paper,the solublization characteristic of isomalt in water was investig ated.The result showed that Bx of the saturated solution increased with the increasing of isomalt/water(g /g ),and the ratio of GPS /GPM in the saturated solution increased too.,e.g .at 45℃,when isomalt/water (g /g )increased from0.91to2.00,Bx of the solution increased from45.8to56.6,corrsponding ly the ratio of GPS /GPM in the solution from1.09to3.30.According to the result,different ratios of mixture of GPS and GPM can be produced from isomalt,which is adaptable to different application fields.
