出口褐云玛瑙螺(蜗牛)肉干营养成分的研究 被引量:4

摘要 用理化方法定量测定褐云玛瑙螺肉干的蛋白质、脂肪等常规营养成分──蛋白质含量(69.6±1.5)%、脂肪含量(3.46±0.06)%。并用氨基酸自动分析仪和原子吸收分光光度计分别测定了各种氨基酸含量和部分微量元素。结果表明:褐云玛瑙螺肉干是高蛋白、低脂肪食品,含有人体所需的多种氨基酸和矿物元素,营养价值高。 protein, fat and some other routine nutritional compositions of the dried meat of Achatina fulica were meased quantitathely in. The protein conent of it was 69. 60±1.5 percent and its fat content was 3 .46± 0.06 percent. Various amino acid contents and some trace elements were measured respechvely with the help of automatic analytical apparatus of amino acid and spectrometer of atomic absorbing. It tured out that the dried meat of Achatina fulica is a kind of food with high protein and low fat. It is nutrihous and contains many kinds of amino acids and mineral elements that people need.
