摘要 目的:了解食品添加剂制剂和食品营养强化剂制剂生产加工过程中次级添加剂和食品原料的使用情况,为制定相关管理措施提供依据。方法:制定调查表向食品添加剂制剂生产加工企业进行问卷调查,了解食品添加剂生产加工过程中次级添加剂和食品原料使用情况,包括使用的品种、发挥的功能作用、主要应用领域等信息。结果和结论:22家食品添加剂制剂生产企业参与了调查,结果显示食品添加剂制剂生产加工过程中主要使用151种次级添加剂和52种原料,主要应用食品着色剂、食品营养强化剂、酶制剂等类别的食品添加剂制剂生产中,根据调查结果提出了食品添加剂和食品营养强化剂中次级添加剂管理措施的三种方案,并对每种方案的优缺点进行了分析。 Objective: To survey the secondary additives and food ingredients used in the manufacture of food additive preparations, and give suggestion on managing food additives preparations. Methods: Conduct a survey among the manufacturers of food additive preparations, to understand the situation of secondary additives and food ingredients used in the food additive preparations, including names, functions and the functions of preparations. Conclusion: 22 manufacturers were involved, the survey shows that 151 kinds of secondary food additives and 52 kinds of food ingredients are mainly being used for producing color preparations, nutrient preparations, and enzyme preparations. According to the conclusion of survey, the author raises 3 proposals on managing food additive preparations.
