摘要
比较分析了红米品种皖稻129与普通稻米品种皖稻147糙米中矿质元素、粗蛋白、脂肪、碳水化合物和氨基酸等营养成分的含量差异。结果表明,皖稻129糙米中脂肪含量比普通稻米低,而碳水化合物、蛋白质、矿质元素的含量均高于普通稻米品种皖稻147,其中Se和Fe元素含量分别超过普通稻米1.75倍和3.75倍;10种必需氨基酸含量超过普通稻米31.58%-114.29%,总含量比普通稻米高58.31%,其中赖氨酸和苏氨酸含量分别是普通稻米的2.14倍和2.11倍。
By comparing and analyzing the difference protein, fat, carbohydrate and amino acids in brown in nutritional ingredients including mineral elements, crude rice between red rice Wandao 129 and ordinary rice Wandao 147, the results showed that, compared with ordinary flee, Wandao 129 had a lower fat content but higher contents of carbohydrate, crude protein and mineral elements in brown flee. In Wandao 129, the contents of Se and Fe were 175% and 375% higher, respectively; the total content of 10 essential amino acids was 58.31% higher and their respective contents were 31.58% -114.29% higher, and among them, the contents of lysine and threonine were 2.14 and 2.11 times as many as those in ordinary rice, respectively.
