摘要
资源丰富的食用昆虫不仅含有人体必需的蛋白质、氨基酸、脂肪酸、碳水化合物、维生素、矿质元素等营养成分,还含有对人体具有保健功能的黄酮类、生物碱、多糖、激素、磷脂类等活性物质,因而具有十分广阔的开发利用前景。本文综述包括家蚕、柞蚕在内的部分食用昆虫含有的主要营养与活性成分,以及这些成分随昆虫生长发育的含量变化,为筛选营养成分均衡的昆虫食品原料和开发不同营养需求的功能性食用昆虫产品提供参考。
Resourceful edible insects contain essential proteins,amino acids,fatty acids,carbohydrates,vitamins,mineral elements,and other nutrients.Moreover,they have flavonoids,alkaloids,polysaccharides,hormones,phospholids,and other active substances which are beneficial to human health and are of high economic value for development and utilization.In this paper,we reviewed research progress on main nutritional and active material compositions of some edible insects including silkworm(Bombyx mori) and Antheraea pernyi,and on content variations of these constituents in different developmental stages,which provides good references for raw material screening in preparation of nutrition-balanced insect-based food products and for development of edible insect products with various nutrients and functions.
