摘要
以胶原蛋白与小麦面筋蛋白为原料制备复合膜,综合考虑复合膜的拉伸性能(抗拉强度与断裂伸长率),并与市场上的胶原蛋白肠衣的拉伸性能及专利数据进行比较,确定所制膜的拉伸性能,在单因素实验的基础上利用完全析因设计实验进行制膜工艺优化。实验结果表明:成膜液pH10.0,乙醇浓度10%,胶原蛋白与小麦面筋蛋白质量比4∶1,甘油质量分数32.5%,处理温度40℃时,复合膜的综合拉伸性能最佳,即抗拉强度和断裂伸长率分别为19.56 MPa和20.18%。该复合膜的拉伸性能基本达到了胶原蛋白肠衣应用的要求,具有一定的应用价值。
Using the collagen and wheat gluten as the raw material to make composite films. Tensile properties of composite films include tensile strength and tensile elongation at break were comprehensively considered,tensile properties of the films were determined on the basis of patent data and tensile properties of collagen casings on the market. The film forming technology of composite films was optimized by full factorial design on the basis of single-factor tests. The results showed that:pH value 10.0,alcohol concentration 10%,the mass ration 4∶1,glycerin mass fraction 32.5%, temperature 40 ℃ . Under these conditions,tensile properties of the composite films were optimum and the results were as follows:tensile strength was 19.56 MPa and elongation at break was 20.18%. The tensile properties of composite films basically reached the requirements of the application of collagen casing and had a certain application value.
