摘要
研究以乙醇为溶剂从红曲米中提取红曲色素,并系统地研究了金属离子、空气、光、温度、pH、氧化剂、防腐剂等方面对红曲色素稳定性的影响,结果显示:金属离子、空气、光对红曲色素的影响相当明显,而温度、pH值、氧化剂和防腐剂的影响较小。最终获得红曲色素生产和保存的最佳外界条件。
In this paper,monascus pigment is extracted from red kojic rice by using ethanol,and the stability of monascus pigment is systematically studied in many factors such as metal ion,air,light, temperature,pH,oxidant,preservative and others.The results show that the effects of metal ion, air and light on the stability of monascus pigment are conspicuous comparatively,whereas it is barely affected by temperature,pH,oxidant,preservative and others.Finally,the best external conditions of monascus pigment production and preservation in this study are obtained.
