摘要
随着我国经济的快速发,居民生活水平的提高,人们对食品的安全性的要求越来越高。天然色素与合成色素相比,它们具有无毒、无副作用,安全性高、色彩自然、一定的保健营养及药理作用的特点。玉米黄色素是从玉米皮或从玉米淀粉生产中的下脚料(玉米粗蛋白)中提取的类胡萝卜素类色素和隐黄素等利用价值较高的天然食用色素。玉米黄色素不仅是一种天然食着色剂,而且是生产保健食品添加剂,它作为天然色素已被欧美等许多国家批准为食用色素。概述了玉米黄色素的营养保健功能,阐述了玉米黄色素在国内外的研究进展以及玉米黄色素制备工艺流程的主要步骤和技术关键,并指出了玉米黄色素在发展中存在的问题以及未来的发展趋势。
With the rapid development of our economy,the improvement of living standards,people on food safety have become increasingly demanding.Natural pigment conpared with the synthetic pigment,with non-toxic,no side effects,features high safety,natural color,some health care nutritional and pharmacological action.Maize yellow pigment from corn skin or waste from the production of corn starch (crude protein in maize) in the extraction of carotenoids and cryptoxanthin and other valuable natural edible pigment.Maize yellow pigment is not only a king of natural food colorants,and is the production of health food additives,it is used as a natural pigment has been approved in Europe and many other countries for edible pigment.This paper introduces the functions of nutrition and health of maize yellow pigment maize yellow,expounds the main steps and the key technologies of the preparation process of Su Su in the domestic and foreign research progress and maize yellow maize yellow pigment,and points out the existing problems in the development and the future development trend.
