摘要
目的调查市售各类肉鸡产品沙门菌污染情况,为沙门菌所致食物中毒的流行病学调查和防控提供科学依据。方法采集市售鸡肝、鸡心和鸡胸,进行沙门菌分离培养、生化鉴定和血清分型。结果 2013年共检测样品331份,检出沙门菌89株,检出率为26.89%,鸡肝、鸡心、鸡胸的检出率分别为37.56%(77/205)、11.11%(11/99)和3.70%(1/27)。89株沙门菌分离株共分为10种血清型,优势血清型为肠炎沙门菌、印第安纳沙门菌、山夫登堡沙门菌。其他血清型有肯塔基沙门菌、Rissen沙门菌、Redba沙门菌、Fillmore沙门菌、鼠伤寒沙门菌、甲型副伤寒沙门菌、鸡-雏沙门菌。农贸市场和超市采集的鸡肝样品沙门菌阳性率差异无统计学意义。结论沙门菌广泛存在于市售各类肉鸡产品中,沙门菌血清型别呈多态型分布,且有地区特异性,有引起食物中毒的风险。
Objective To investigate the Salmonella contamination in chicken on retail,and provide basis for epidemiological investigation and prevention of food- poisoning. Methods Collect chicken liver,heart and breast on sale in markets. Separation,biochemical identification and serotyping the isolates strains. Results 89 Salmonella strains were isolated in 331 samples in 2013,and the positive rate was 26. 89%. Chicken liver,heart,chicken positive rate was 37. 56%( 77 /205),11. 11%( 11 /99) and 3. 70%( 1 /27). 89 strains of Salmonella was divided into 10 kinds of serotype. The dominant serotypes were S. enteritidis,S. indiana,S. senftenberg. Other serotype was S. Kentucky,S. Rissen,S. Redba,S. Fillmore,S. typhimurium,S. paratyphi A,S. gallinarum. There is no difference in Salmonella positive rate between farmer's markets and supermarkets of chicken liver. Conclusion Salmonella existed in some kinds of chicken products widely. The feature of Salmonella serotypes was polymorphic distribution and region- specific. There is the risk of food poisoning.
