摘要
象雄半细毛羊是西藏阿里地区多年来培育的适应高原环境的本地品种。现阿里地区存栏约3万只左右,是当地农牧民喜爱的食品。为进一步研究其在高原环境下生长的羊肉品质,并结合相类的羊肉进行比对研究。实验部分按照国家肉与肉制品相关标准进行检测,主要检测指标为水分、灰分、微量元素和氨基酸水平等。对象雄半细毛羊肉质品质进行了分析,并与澎波半细毛羊、云南半细毛羊、青海半细毛羊等进行了肉质常规营养和氨基酸含量分析对比,结果表明象雄半细毛羊蛋白质含量17.95%,脂肪含量达11.27%,水分含量为68.53%,氨基酸总量17.76±1.12 g/100g。必需氨基酸和肉风味相关氨基酸含量均高于其余三种羊肉;四个品种的钙含量相似,但铁锌镁含量不相同。
The Mutton quality of Xiang Xiong Semi Fine wool Sheep was analyzed an d comparedwith Peng Bo Semi Fine wool Sheep, Yun Nan Semi Fine wool Sheep, Qing Hai Semi Fine woolSheep on meat routine nutrient and amino acid contents. The results showed that the content of pro?tein ,cholesterol, water content and total amino acid in mutton of Xiang Xiong Semi Fine wool Sheepwere 17.95%, 11.27%, 68.53%, (17.76 ± 1.12) g/100g ,respectively.The content of essential aminoacids and meat flavor related amino acids were higher than those of the other three kinds of sheep’smutton. The content of calcium, iron and zinc magnesium content were also different.
