摘要
中国幅员辽阔,南北地区饮食文化的不同,居民饮食习惯、烹饪方式、食物的种类存在较大差异,居民膳食中除通过食用植物油摄取脂肪酸外,其他食物中脂肪酸占总膳食脂肪酸的比例也接近50%。通过调查分析得出居民每日膳食中除食用油以外食物中脂肪酸的含量,为居民合理饮食、均衡营养提供科学的理论指导。
China is a wide-ranging country with a big different in food culture between the north and south, including residents' food habit, cooking methods and food kinds. Except from vegetable oils, about fifty percent of the total dietary fatty acid intake is from other food resources. Through investigation and analysis, the residents' daily di etary intake of fatty acids excluding the vegetable oils was provided for the theoretical guidance to residents on reasonable diet and bal- ance nutrition.
