摘要
香椿营养价值丰富,药用价值突出,其产业开发前景广阔,然而其不易贮藏的特性阻碍了香椿的产业化进程。主要介绍了香椿的采后品质、生理变化及贮藏技术,为今后开发香椿保鲜新工艺提供参考依据。
With abundant nutrition value and outstanding medicinal value,Toona sinensis Roem has a bright future.However,its characteristics of difficulty to storage have seriously hampered the process of the industrialization of T.sinensis.The physiological changes after harvesting and storage and common preservation methods were introduced,which will provide the basis for the future development of new fresh technology.
