摘要
着重从射线方面因素对黄酒中内源性塑化剂类物质生成影响因素进行试验探索,利用GC-MS测定不同预处理条件下黄酒中塑化剂类物质含量变化情况。结果表明,该黄酒在各个条件下中只检测到DEHP数据,且在建立了60Co-Cγ辐照熟化处理下的DEHP含量变化数学模型,即y=0.1899x+0.02,相关系数平方R2=0.9917;在以上影响因素作用下,发现黄酒中的芳香物质(乙酸乙酯、乳酸乙酯)增量明显,说明黄酒中酯化反应的发生和塑化剂类物质的生成不可避免。除了上述安全性指标(塑化剂类物质)生成和酒液的色差变化较明显外,其他常规指标变化微小,即使在太阳光长时间照射下,黄酒的常规质量指标变化均不明显。
This paper focuses on exploring the effects of temperature and radition on the endogenous plasticizer substances in rice wine with GC-MS to detect the changes of levels of plasticizer substances(DEHP) under different pretreated conditions. The results show that under various conditions the rice wine is detected that only has data DEHP. By constructing a mathematical model, the mathematical model of DEHP(y) formation as a function of radiation dose(x) treated by ^60Co γ-ray irradiation was established, i.e, y=0.1899x+0.02(R^2=0.9917); Affected by above-mentioned factors, the increases of aromatic substances such as ethyl acetate and ethyl lactate were obviously detected, suggesting the inevitable esterification and plasticizer formation. In addition, in contrast to the significant changes of plasticizer(DEHP) and color, other indexes changes a little. These indexes displayed no significant changes even subjected to longterm storage at prolonged exposure to sunlight.
