摘要
在多玛绵羊主产区选择自然放牧条件下,健康发育正常、膘情中等的50只羯羊进行屠宰试验,在现场和实验室对肉品质进行测定。结果表明:2岁多玛绵羊羯羊宰前活重达到(40.15±2.77)kg,胴体重达到(15.99±1.77)kg,屠宰率为(39.83±2.61)%,净肉率(60.17±2.10)%,眼肌面积(11.06±1.25)cm2;羊肉中氨基酸总量平均为19.33g/100g,其中必需氨基酸总量为9.82g/100g,非必需氨基酸总量为9.51g/100g;蛋白质含量为20.24g/100g,脂肪含量平均为5.82g/100g,胆固醇平均含量为71.99mg/100g;pH为5.78;矿物质含量丰富。多玛绵羊对青藏高原的恶劣气候和特殊生态环境有极强的适应性,是高寒牧区饲养的优良绵羊类群。
50 normally developed, healthy and moderate fat wethers grazing uncontrolled in Duoma sheep raising area were chosen to be slaughtered to observe the mutton quality on the spot and measure it in the lab. The results showed that the total amino acid content in mutton from Duoma sheep is 19.33 g/ 100g; protein content 20.24 g/100g,0.34 g/100g higher than the local bred Panbo semi fine wool sheep; fat content is 5.82 g/100g, 0.22 g/100g less than that of the Panbo sheep, matching the requirement of low fat meat. The pH,5.78,is of standard level. Mineral content is rich, and the total amino acid content is 0.37 g/100g higher than that of the Yunnan semi fine wool sheep, and the essential amino acid content in mutton is 50.9 % of the total amino acid, meeting FAO/WHO assessment standard to be superior protein food. The net mutton rate of Duoma sheep at 1 and 2 years old are 17. 15% and 19.86% higher than that of the Awang sheep, a Tibetan local fine breed. The body weight of a 1-year-old sheep is 75.89% of a 2- year-old one, indicating that 1-year-old Duoma sheep can be slaughtered.
