摘要
以木薯粉为原料,研究了新型抑菌剂在生料发酵中的应用情况,对比了发酵酒度、生酸等。结果表明,在80℃的温度下,液化1 h,总糖与氨氮基本没有损失。发酵过程中添加150 mg/L的偏重亚硫酸钠能有效防止杂菌生长,酒精清洁生产技术比传统工艺更有利于高浓度发酵。
New antimicrobial agent was used in clean production of alcohol (cassava flour used as raw materials, and uncooked materials fermen-tation adopted). The fermenting alcohol and acid-producing status were investigated. The results showed that, at 80℃ and 1h liquefaction, there was almost no loss in total sugar and ammonia nitrogen. The addition of 150 mg/L sodium metabisulfite in the fermentation process could effec-tively prevent bacteria growth. Clean production of alcohol, compared with traditional production modes, was more beneficial to high-concentra-tion fermentation.
