摘要 以野生云南油杉嫩叶为研究对象,采用标准方法对其营养成分和总黄酮进行分析测定。结果表明,云南油杉嫩叶含有较丰富的膳食纤维,氨基酸种类齐全、组成合理,可以提供优质蛋白。通过计算氨基酸评分可知,苏氨酸为第一限制性氨基酸。维生素和矿物质含量丰富,其中VC和Fe元素含量高达84.67 mg/100 g和25.89 mg/100 g。采用分光光度法测得总黄酮含量为3.1.3 g/100 g。证明野生云南油杉嫩叶是营养和保健价值较高的新资源食品,具有良好的食用价值和开发前景。 Nutritional components and total flavonoids in Keteleeria evelyniana. Mast was investigated by standard methods in the study. The results showed that the object content rich fiber, the composition of amino acids was reasonable and the first limiting amino acid was threonine. Burgeon of the plant can provide high quality proteins and vitamin C and mineral element Fe were 84.67 mg/100 g and 25.89 mg/100 g respectively. The total flavonoid contents of Keteleeria evelyniana. Mast was 3.13 g/100 g. The data showed the new resource food had rich nutrition and healthy functions. it reveals high edibleness and great development prospects.
